I think the Elk's Club sign uses the old model. Look at how blocky it is, and the blurry textures. Also that eagle is terrifying.
This clearer version of the Welcome to Lost River sign reveals that it is the same image from 2.7- note the trees and rocks. Not a big surprise, but cool nonetheless.
This image is just titled "Calf_Fur.png". I assume it's a bison calf? I haven't found a model to go along with it.

There are no models (that I can find) but there are a few textures for the bighorn sheep. Note that the texture is a baby- babies are named (adult name)_Y. for example, the wolf pups are GrayWolf_Y. There is also audio of adults ramming:

Some sprites which I believe are the platforms the game is planned to release on. This includes platforms that did not receive 2.7, such as 3DS and various consoles. 2.7 only ran on Windows, Mac, IOS, Android, and Kindle.
Black bears are coming to wolfquest, if these tracks are anything to go by.
Black bears are also mentioned under "predators" on the official wolfopedia.
I know that there was a glitch where eagles would drop their fish, and the devs decided to make it a feature, and make dropped fish edible, but I have yet to see anyone actually document this online, nor have I seen it myself. I have found proof that trout exist within the game, however. If you've seen a dropped fish in the game, or if you have a screencap (!!!) please let me know!
For whatever reason, the game has whip sound effects.

I cant read the script files, but newborn pups do have scripts. Not sure what these do.
