I started pronouncing the word coyote diferent to where it sounds like a hillbilly trying to say the word. It would sound something like, "Kaiyote, or Kaiyoton."

Because of an inside joke with my sister after finding an elk carcass way too far into the water, we call that carcass that always appears by the shallow hoop around the river by Sandbar Crossing, the "Watered Out Elk."

I use Bob the Bear, obviously. It's a classic and it just rolls off the tongue.
I like Chester for the coyotes, but normally I call them 'Jerry' or 'Zippy'
Cow elks are 'Meatburger.' Bull elk are 'Angry Meatburger.' Elk carcasses are 'Discount Roadside Meatburger'
The hares, I usually refer to by the name of a character from Watership Down. Whatever one comes to mind first, though it's usually one of Hazel, Woundwort, or Bluebell.
The mate is 'Beautiful Fool.' Gets promoted to 'Grocery Spouse' or 'Therewoof' on days when the A.I. is kind to me.
The pups are, collectively, 'The Pudgewoofs'
The wolf that kicks you out of other pack territories during the final mission is 'Sentry Stan.'
Other wolves are referred to as 'Skittish Sally'/'Nervous Norman', 'Bitey McGee', 'Sultan of Socialization', or 'Quitter' depending on how aggressive they are.
The farmer is 'Boomstick Jones'
The adult cows are all 'The Third Cow' and the calf in 'Premium Tender Meatburger.'
The least crude thing I call the eagle is probably 'Roger the Reoccurring Reprobate.'
EDIT: Darny darn I forgot the cougar
I haven't played 2.7 yet but for now I'm calling the cougar Carrie

I've never given the NPCs nicknames, but I glanced at Pelican's comment and misread "Chester" and "Heirloom," so... I think I'm going to be calling coyotes Charlton Heston from now on. xD
Out of doubt, out of dark, to the day's rising
I came singing into the sun, sword unsheathing
To hope's end I ran, and to heart's breaking
Now for wrath, now for ruin and a red nightfall!
