I don't really die too often, like, I'm really careful about it, but if I'm bored I'll go at a bull elk all by myself, and die 100 times

I'd say bears, probably. Simply because I get overconfident in my abilities to ward off a bear, before realizing my grave mistake a little too late, and the bear has already smacked me into another dimension ^^"

Moose and the occasional cougar (sometimes it doesn't register the bite when I'm chasing one away and it kills me). Bull moose are something to stay away from in Singleplayer!

Has to be my favourite so far! No need to be embarrassed. Bull moose are tough enough as they are, let alone empowered by failed Floppy experimentation.

Ugh. Mostly moose.
I've been experimenting with solo hunting moose, working on a method to easily find them and hunt them, and so far, my method seems to work. I just need more successful hunts to ensure it's not a fluke and then to test it on bull moose and not just cows.
Problem is that I often don't get enough carcasses to use, or I am a bit too slow getting out of range from a kick, so there's a LOT of failures.
Aside from that I usually get smacked by bears. I chase them off all the carcasses I pile up for this moose experiment and sometimes misjudge when to strike and chase them off.

In single player, definitely the cow ranch.
Since I try to play single player more realistically, there's not really a way to hunt moose or bull elk without killing entire herds, and that already annoys me enough when raising pups in multiplayer. As such, I pretty much avoid the overly powerful prey, and will probably continue to do so until 3.0 comes out.
In the meantime, I very occasionally go to the cow ranch for the calf and that can often go disastrously, but usually it's just easier to hunt elk. Takes about as much time and I get more food out of it.
If we're counting multiplayer then it's definitely being hit by a moose I was nowhere close enough to be hit by.

I actually get killed by moose usually, especially in moose hunting servers on multiplayer
